Chocolate Treats with Nuts and Berries
This easy recipe is always a great success with kids, and I love to make with my granddaughter, Shorey. It is made in a few minutes and can be varied depending on what you have in your refrigerator and pantry. Let the treats set in the refrigerator, then if you only use dried fruit, nuts and seeds, the treats can be stored in the refrigerator longer than if using the fresh fruit and mint.
You will need 12 small baking paper cups.
Makes 12 pieces
Ingredients
- 8 ounces chopped semisweet or bittersweet chocolate
- About 3 tablespoons dried fruit, such as dried cranberries, golden raisins or dried apricots
- About ¼ cup nuts and seeds, such as hazelnuts, pistachios, pine nuts or pumpkin seeds
- A few raspberries and blueberries
- A few mint leaves, roughly chopped or torn
Method
- Melt the chocolate in a double boiler or in the microwave. If using the microwave, microwave for 1 minute, stir, place back in the microwave for another minute and then stir again. It should be completely melted.
- Pour about 2 tablespoons of the chocolate into the paper cups. Arrange the dried fruits, nuts, berries, and mint leaves on top of the chocolate, gently pressing them into the chocolate. Refrigerate until set, 30 minutes to 1 hour. Remove from the paper cups and enjoy.
