Bludorn Restaurant is nestled in the heart of the Montrose neighborhood of Houston. Chef Aaron Bludorn roots himself in the Gulf serving New American, French-inspired fare with passion and integrity. The menus are comprised of seasonally rotating dishes, global wines, and handcrafted cocktails served in this neighborhood landmark. For this 90/90 event, Bludorn will offer a four-course, special guest chef dinner with chef Aaron Bludorn hosting guest chefs Michael Fojtasek, Chris Shepherd and Becky Masson.
Highlights
- Doors open at 6:00pm with a cocktail hour featuring light bites.
- Guests will be seated at 6:45 with the first course served at 7:30.

Aaron Bludorn
Chef/owner, Bludorn Restaurant
Chef and next-generation restaurateur, Aaron Bludorn’s mission is to create meaningful experiences through food and hospitality. Hailing from the Pacific Northwest, Aaron was drawn to the kitchen at an early age during his first job working as a dishwasher and prep cook in a small diner on Bainbridge Island. Energized by the camaraderie demonstrated in restaurants, Aaron pursued a career in hospitality and began his journey at the prestigious Culinary Institute of America (CIA) in Hyde Park.
His learnings at CIA led to a prosperous career working under the country’s most celebrated chefs including Michelin-starred Chef Douglas Keane and Daniel Boulud. While working as Executive Chef in Manhattan’s Café Boulud, Aaron met his now-wife, Victoria Pappas Bludorn, and was cast in Netflix’s blockbuster culinary competition show, The Final Table. That same year, he was honored by Star Chefs when he earned New York City’s Rising Star Community Chef Award.
In 2019, the Bludorns moved to Houston and in 2020, they opened the eponymous restaurant, Bludorn. In the fall of 2022, Chef Aaron opened his second restaurant, seafood inspired, Navy Blue, in the heart of Rice Village – followed by Bar Bludorn in March 2024, and most recently, Perseid, which opened in January of this year inside of Hotel Saint Augustine. Chef Aaron has a devotion to the city of Houston, where he supports many charities through special dinners and menu items, and hosts events to bring the industry together.
Guest Chefs

Michael Fojtasek
Founder and executive chef, Olamaie
Michael Fojtasek began his career in Austin, Texas at a small Mediterranean restaurant called FINO. He was inspired to join the hospitality industry by a family culture of seeking delicious food and unique experiences. From there, Michael attended culinary school at the Culinary Institute of America, Napa Valley, before working in some of the best restaurants in the country, including Abacus, per se, Lincoln Ristorante, and Son of a Gun.
In 2014, Michael returned to Austin to open Olamaie. His work and the restaurant has gained many accolades — Food and Wine Best New Chef ’15, 3x James Beard Finalist, and a Michelin Star in ’24. Today, Michael enjoys coaching and leading the teams at all of his operations that currently include Olamaie, Maie Day, Gimme Burger, and The Albert Hotel.

Rebecca Masson
Chef/owner, Fluff Bake Bar
Rebecca Masson, known as Houston’s “Sugar Fairy,” is a celebrated pastry chef and owner of Fluff Bake Bar, named one of the South’s Best Bakeries by Southern Living.
A Wyoming native, she trained at Le Cordon Bleu in Paris and honed her skills in renowned New York kitchens, including Daniel and The Red Cat. Rebecca also competed on Top Chef: Just Desserts, showcasing her talent on a national stage. After moving to Houston, she gained a cult following and worked with top chefs like Ryan Pera, Chris Shepherd and Charles Clark before launching her own bakery in 2011. Her creations have been featured in Food & Wine, Texas Monthly, Time Magazine and the Houston Chronicle.

Chris Shepherd
Houston-based chef, entrepreneur, restaurateur, author, wine guy, TV host
James Beard Award-winning Chef Chris Shepherd has helped change the landscape of the Houston culinary scene since opening Underbelly in 2012. Chris was named one of the 10 Best New Chefs in America by Food & Wine in 2013 and was then awarded the 2014 James Beard Award for Best Chef: Southwest.
Chris’ first cookbook, Cook Like a Local: Flavors that Will Change the Way You Cook—and See the World, was published by Clarkson Potter in September 2019 and was nominated for a 2020 James Beard Foundation Book Award. In 2023, Chris launched a TV show Eat Like a Local on Houston’s KPRC-TV, where he tells the stories of Houston’s rich and diverse food and beverage scene. Eat Like a Local won a Lone Star Emmy for Interview/Discussion in 2024.
