Join Michelin-starred Chef Phil Tessier of PRESS Restaurant and Under-Study for an unforgettable evening honoring Jacques Pépin’s 90th birthday.

The celebration will begin with a Champagne and canapé reception at the Napa Valley Museum of Art & Culture (“The MAC”), where guests will enjoy the exhibition “Julia Child: A Recipe for Life”. A collaborative dinner between Chef Tessier and Penfolds will follow at Under-Study, located within the museum. Guests will enjoy a specially curated four-course menu paired with an extraordinary selection of Penfolds wines. Guests will also have the once-in-a-lifetime opportunity to bid on Pépin’s original painting, Poulet de Bresse, to serve as a reminder of this extraordinary evening.

Highlights

Since 1844, Penfolds has been grounded in experimentation, curiosity, and uncompromising quality. These carefully selected wines (some up to $2500 per bottle and unavailable on the market) will be paired with each course.

Wines to be served

2012 Penfolds x Champagne Thiénot Lot 3 Blanc de Blancs Grand Cru Champagne – France – Inaugural vintage celebrating our 175th anniversary. We have re-ignited our love affair with sparkling wine, a project Penfolds first explored on Australia soil in the early 1900’s. Now more than a century later, we set our sights on France and the region of Champagne. Partnering with Thiénot, a respected player in the world of Champagne, Penfolds has worked in tandem with their team to release an extraordinary Champagne.

Yattarna Bin 144 Chardonnay – Penfolds’ flagship white wine known as ‘white Grange’. Launched in 1998 with the 1995 vintage, Yattarna is the result of one of the most comprehensive, focused and highly publicized wine development projects ever conducted in Australia. The aspiration and independence of mind across generations of Penfolds winemakers inspired the ambition to create a white wine that would set the standard for ultra-fine Australian Chardonnay.

2018 Bin 98 Quantum Cabernet Sauvignon Wine of the World – Featured with service from our Imperial St. Louis Aevum Crystal Decanter Service Ritual.Penfolds Quantum Bin 98 is the continuation of a twenty-year endeavor from when Australian vine cuttings were planted in Californian soil. The wine serves as the most powerful expression of our blending style and leads the charge in Penfolds ambition to seek out parcels of intense flavor, structural tannins and equal parts grace and complexity. Northern and southern hemispheres bring prized cabernet sauvignon from Napa Valley and pedigreed shiraz from South Australia, respectively, into each other’s realm. Not adhering to expectations and de rigueur.

Limited Edition 2018 Superblend Duo 802A and 802B Cabernet – Shiraz Blend – One Superblend. Two Interpretations. Superblend 802.A and Superblend 802.B represent two unique interpretations of the iconic Australian blend of cabernet sauvignon and shiraz, sourced from unique parcels destined for Penfolds flagships.

2021 La Chapelle Grange –Uniting winemaking cultures, spanning hemispheres and time. Fate. A longstanding friendship between two winemakers created an idea. The idea became a trial. The trial became a wine. And then there were three – 2021 (bottled), 2022 (bottled) and 2023 (in barrel). Syrah from the legendary Hill of Hermitage, La Chapelle, coupled with Shiraz from esteemed South Australian vineyards, Grange. The blend’s raison d’être: One variety – reunited, reinterpreted, reassembled. This is the only tasting of this wine in North America.  The US allocation was less than 100 bottles on a very limited overall production.

Grandfather 50 Year Rare Tawny – The 50-Year-Old Rare Tawny is a symbol of Penfolds heritage, typifying collaboration, and shared creative expression. Only 330 bottles produced per series, this wine’s components include a blend from the 1915, 1940, 1945, 1965, 1969 and 1994 vintages and they carry a generic connection to the earliest recorded vintage of Penfolds Grandfather Tawny.

 

Guests will have the opportunity to purchase Penfolds wines that are not available to the public, with a portion of the proceeds benefiting the Jacques Pépin Foundation.

Guests will also receive signed copies of Pépin’s book, The Art of Jacques Pepin, as well as a copy of the evening’s menu, illustrated and signed by Pépin.

PRESS Restaurant and Under-Study

Philip Tessier, an acclaimed chef, author, and mentor, serves as Chef Partner at PRESS Restaurant in St. Helena, California. Best known for its modern, refined American cuisine, PRESS has earned a Michelin star and the distinction of being a World’s 50 Best Discovery restaurant.

Along with Owner Samantha Rudd and Managing Partner, Justin Williams, Tessier is getting ready to launch Under-Study — a new culinary marketplace with a modern patisserie, and butcher shop next door to Press.

Tessier is the first American chef to place on the podium at the internationally renowned Bocuse d’Or Competition in Lyon, France. Following his success, he coached Team USA to their first ever Gold medal in 2017. He recounted this victory in his book “Chasing Bocuse,” published in October that same year.

Tessier is quick to recognize the efforts of his hardworking team and emphasizes his ongoing commitment to his industry, “There’s nothing more gratifying than to encourage someone to grow from a starting point and transition into a better person, both personally and professionally, and to succeed in their own way. Mentorship lives way beyond just one’s own success. We want PRESS to become the restaurant where young cooks come to learn how to become great chefs.”

Under-Study

As Executive Pastry Chef at Under-Study, Frank Vollkommer joins the dynamic team of Owner Samantha Rudd, Chef Partner Philip Tessier, and Managing Partner Justin Williams. Vollkommer brings a high level of patisserie experience, technical precision, and creativity, making him a perfect match for the culinary philosophy at Under-Study.

Vollkommer’s diverse experience spans food service and hospitality, including culinary arts, baking and pastry, education, corporate food ingredient systems, design consulting, and business ownership. In 2005, he earned the distinction of Certified Master Pastry Chef (CMPC) through the American Culinary Federation. Volkommer is one of only four chefs to pass the rigorous and comprehensive ten-day iteration of the practical exam.

Throughout his career, Vollkommer has regularly competed in national and international food shows, earning numerous medals, distinctions, and awards.

PRESS Restaurant and Under-Study

Justin Williams grew up in Napa Valley surrounded by the bounty of the area. At 14, he entered the restaurant world, later enrolling at the Culinary Institute of America and staging at The French Laundry in his free time.

Williams went on to become General Manager at Chef Thomas Keller’s Bouchon Bistro and Ad Hoc, before joining Frasca Hospitality Group, where he oversaw operations for four establishments, including Tavernetta and Sunday Vinyl.

In 2022, Williams returned to Napa as Director of Operations and now Managing Partner at PRESS, reuniting with his fellow TKRG alumni. Committed to excellence and mentorship, he says: “When I retire someday, I hope people will say that I made an impact on their life, that I helped them become a better professional, and achieve their dreams.’’
