Seasoned Olives
The deli at my supermarket offers six different kinds of olives and I like to combine and season some of the pitted ones to make my own mixture. My favorite varieties are kalamata, oil-cured, and small green olives. These are excellent with drinks.
Makes about 1 cup
Recipe
To 1 cup mixed pitted olives, add 1 tablespoon lemon zest, about 2 teaspoons fresh lemon juice, 2 tablespoons extra-virgin olive oil, and 1 teaspoon each shredded fresh oregano and fresh sage. Mix well warm for about 30 seconds in a microwave oven to develop the flavor.
