
Yuu Shimano
Chef Yuu Shimano is the chef-owner of Restaurant Yuu, a Michelin-starred French restaurant in Brooklyn, New York. Trained at the prestigious Tsuji Culinary Institute in Japan and France, he spent eight years in acclaimed French kitchens, including La Villa des Lys in Cannes and Guy Savoy in Paris as saucier.
In 2016, he moved to New York as Executive Chef at Mifune, and in 2023 opened Restaurant Yuu. Within six months, it earned a Michelin star, was named the No. 1 Best Restaurant in America by Robb Report (2024), and ranked No. 12 on OAD’s 2025 North America list.
Chef Yuu brings the precision and seasonality of Japanese sensibilities to classical French technique, showcased in a theatrical counter-style setting. Signature dishes, such as his Duck en Croute, reflect his vision of merging heritage and innovation for a refined, immersive dining experience.
