Michael Fojtasek began his career in Austin, Texas at a small Mediterranean restaurant called FINO. In 2014, Michael returned to Austin to open Olamaie. His work and the restaurant has gained many accolades — Food and Wine Best New Chef ’15, 3x James Beard Finalist, and a Michelin Star in ’24. Today, Michael enjoys coaching and leading the teams at all of his operations that currently include Olamaie, Maie Day, Gimme Burger, and The Albert Hotel.
